Today I’m sharing a recipe that I recently made as a side-dish that turned into a meal.
The January issue of Shape magazine included a bevy of great recipes including one for Gingered Apple-Cabbage Slaw. As with most recipes, I tweaked this one to my own tastes.
1 small apple sliced (I used a honeycrisp – you’ll want a sweet apple)
Juice of 1 lemon
2, 14 oz. bags of coleslaw (cabbage, carrots)
2 T apple cider vinegar
2 tsp ground ginger (or more)
1/2 tsp honey
1 tsp dijon mustard
1/4 tsp garlic salt
1-2 T creamy peanut butter
1/4 cup golden raisins
cilantro and chopped peanuts to garnish
*Stir together the lemon juice, vinegar, ginger, honey, mustard, salt and peanut butter until mixed well.
*Add the coleslaw, apple, raisins to the dressing. Mix well so that the coleslaw is coated in dressing.
*Add the raisins and cilantro and mix one more time. Sprinkle chopped peanuts on top before serving.
This recipe can be tweaked to your own tastes. For example, if you prefer sweeter food, add more honey. If you want an extra kick, more ginger. You could use fresh ginger, chop your own head of cabbage, shred carrots, but the bags of coleslaw are worth it because they really make this quite easy and fast to prepare. (Note: The Shape recipe included peanut oil and scallion.)
Serve this as a side dish with burgers, as a salad main dish, or eat it in a wrap. It’s a versatile and fresh dish.
What’s your favorite side dish?
Sunday I was going to get my bake on but then a Paula Deen emergency occurred… a refrigerator malfunction caused the 2 remaining sticks of margarine in the fridge to melt–all over. After cleaning everything up at least my hands were nice and smooth from all of the oil!
The full-throttle peanut butter cookies I had planned to bake were going to have to wait. But I still wanted to bake. Enter Peanut Butter Bombs. These are my super-easy yet super-tasty go-to easy to make cookie. They are always a hit but now the secret is out that they are only 4 ingredients and take less than 30 minutes to mix, make, and bake!
Peanut Butter Bombs
1/4 cup brown sugar
3/4 cup peanut butter (creamy, crunchy, anything works)
1/2 cup chocolate (chips, M&Ms, other candy)
*Preheat the oven to 350 degrees.
*Crack the egg into a mixing bowl and stir with a fork.
*Add brown sugar and peanut butter.
*Mix with a spoon until blended
*Add in the chocolate, stir to combine.
*Place by the spoon full on an un-greased cookie sheet.
*Bake 12-15 minutes and enjoy!
This recipe makes approximately 1 dozen cookies. Store in an airtight container. Let me know if you make these!
These are not part of the plant-strong program, but are a treat that QAG enjoys and I shared this latest batch with my co-workers. When I offered them at work and a couple of people declined, I did tell them that they weren’t healthy. Then I took them to my staff meeting and they disappeared.
Kostas always appreciates a good pb jar.
Side note – Spring Break is in the air so I’ll leave you with this:
